Ingredients
For the Bitter Gourd Chips
- 500 gm Bitter Gourd karela, about 1 medium-sized bitter gourd, thinly sliced lengthwise
- 2 tsp Salt
- 2 tbsp Mustard Oil
For the Spicy Masala
- 1 medium Onion thinly sliced
- 1 tsp Mustard Seeds
- 1 tsp Chili Powder adjust to your spice preference, red
- 1/2 tsp Mango Powder amchur, dried
- 1 tsp Oil for the masala (vegetable or canola oil)
Instructions
Prepare the Bitter Gourd
- Sprinkle 2 tsp salt evenly over the sliced bitter gourd. Let it sit for 15-20 minutes to draw out excess moisture and reduce bitterness. Pat the slices dry with a clean kitchen towel.
Air Fry the Bitter Gourd
- Preheat your air fryer to 180°C (350°F). Toss the bitter gourd slices with 2 tbsp mustard oil. Arrange them in a single layer in the air fryer basket, ensuring they aren't overcrowded. Air fry for 15 minutes, shaking the basket halfway through to ensure even cooking and prevent sticking.
Make the Spicy Masala
- Heat 1 tsp oil in a small pan or kadai over medium heat. Add the mustard seeds and let them splutter. Add the sliced onion and sauté until softened. Stir in the red chili powder and sauté for another minute.
