Instructions

Prepare the Bitter Gourd

  • Sprinkle 2 tsp salt evenly over the sliced bitter gourd. Let it sit for 15-20 minutes to draw out excess moisture and reduce bitterness. Pat the slices dry with a clean kitchen towel.

Air Fry the Bitter Gourd

  • Preheat your air fryer to 180°C (350°F). Toss the bitter gourd slices with 2 tbsp mustard oil. Arrange them in a single layer in the air fryer basket, ensuring they aren't overcrowded. Air fry for 15 minutes, shaking the basket halfway through to ensure even cooking and prevent sticking.

Make the Spicy Masala

  • Heat 1 tsp oil in a small pan or kadai over medium heat. Add the mustard seeds and let them splutter. Add the sliced onion and sauté until softened. Stir in the red chili powder and sauté for another minute.

Combine and Finish

  • Add the air-fried bitter gourd to the pan with the onion masala. Sauté for 5 minutes, allowing the flavors to meld. Stir in the dried mango powder and cook for another 2 minutes.

Serve

  • Serve the crispy bitter gourd chips hot as a delicious snack or side dish with bread, roti, or your favorite meal.

Recipe Notes

Expert Tips for Perfect Bitter Gourd Chips

  • For extra-crispy chips, slightly increase the air frying time and reduce the oil slightly.
  • If your bitter gourd is exceptionally bitter, you can soak the slices in salt water for a longer period (up to 30 minutes) before air frying.
  • Feel free to experiment with other spices! Turmeric, cumin, or garam masala would all complement the bitter gourd well.
  • For a tangier flavor, add a squeeze of lime juice at the end.
