Ingredients
For the Arbi (Taro Root)
- 500 gm Taro Root arbi, peeled and cut into 1-inch thick pieces
- 1 tbsp Mustard Oil for pre-coating the arbi
For the Masala
- 1 medium Onion finely chopped
- 1.5 cup Tomato Puree
- 1 tbsp Ginger finely chopped
- 1 tbsp Garlic finely chopped
- 1 tsp Cumin Seeds
- 10-12 Curry Leaves
- 1 tsp Turmeric Powder
- 1 tsp Chili Powder adjust to your spice preference, red
- 1 tsp Coriander Powder
- 1 tsp Garam Masala
- Salt to taste
- 1 tbsp Mustard Oil for the masala
- 1/2 cup Water as needed
Instructions
Prepare the Arbi
- Cut the taro root into 1-inch thick pieces. Toss with 1 tbsp mustard oil, ensuring even coating. Air fry at 180°C (350°F) for 15 minutes, or until crispy.
Make the Masala
- Heat 1 tbsp mustard oil in a pan. Add cumin seeds and sauté until they splutter. Add the finely chopped onions, ginger, and garlic. Sauté for a few minutes until softened.
- Add curry leaves and sauté for 30 seconds. Stir in tomato puree, turmeric powder, red chili powder, coriander powder, and garam masala. Cook for 5-7 minutes, stirring occasionally, until the oil separates from the masala.
- Add the crispy air-fried arbi to the masala. Mix gently to coat evenly. Add 1/2 cup water and simmer for 3-4 minutes, allowing the flavors to meld. Adjust salt as needed.
Serve
- Serve hot crispy arbi masala with roti, naan, or rice. Enjoy as a side dish or a delicious snack.
