Instructions

Prepare the Arbi

  • Cut the taro root into 1-inch thick pieces. Toss with 1 tbsp mustard oil, ensuring even coating. Air fry at 180°C (350°F) for 15 minutes, or until crispy.

Make the Masala

  • Heat 1 tbsp mustard oil in a pan. Add cumin seeds and sauté until they splutter. Add the finely chopped onions, ginger, and garlic. Sauté for a few minutes until softened.
  • Add curry leaves and sauté for 30 seconds. Stir in tomato puree, turmeric powder, red chili powder, coriander powder, and garam masala. Cook for 5-7 minutes, stirring occasionally, until the oil separates from the masala.
  • Add the crispy air-fried arbi to the masala. Mix gently to coat evenly. Add 1/2 cup water and simmer for 3-4 minutes, allowing the flavors to meld. Adjust salt as needed.

Serve

  • Serve hot crispy arbi masala with roti, naan, or rice. Enjoy as a side dish or a delicious snack.

Recipe Notes

Expert Tips for the Best Crispy Arbi Masala:

  • For extra crispy Arbi, ensure the pieces are relatively uniform in size and thickness before air frying.
  • Don't overcrowd the air fryer basket. Work in batches for optimal crispiness.
  • If your tomato puree is very thick, add a little water to adjust the consistency of the masala.
  • Feel free to add other vegetables like peas or green beans to the masala for extra flavor and nutrition.
