- Soak the chia seeds in 150 ml of water. Set aside to thicken. This creates a gel-like texture that adds creaminess to the soup.
- Heat the olive oil in a heavy-bottomed pan over medium heat. Add the finely chopped onion and sauté until translucent and softened, about 5 minutes.
- Add the freshly ground nutmeg, soaked and peeled almonds, and cubed pumpkin to the pan. Stir to combine.
- Pour in 1 cup of water, along with salt and freshly ground black pepper. Stir well.
- Reduce the heat to low, cover the pan, and simmer for 15-20 minutes, or until the pumpkin is tender.
- Once the pumpkin is cooked through, remove the pan from the heat.
- Carefully transfer the mixture to a blender and blend until smooth. This creates a creamy base for the soup.
- Return the blended mixture to the pan. Add the vegetable stock and stir well to combine.
- Bring the soup to a gentle simmer over medium heat. Add the soaked chia seeds and stir to incorporate.
- Continue to cook for another 5-7 minutes, or until the soup has thickened slightly. The chia seeds will absorb some of the liquid and contribute to the creamy consistency.
- Stir in the thick coconut milk. This adds richness and enhances the creamy texture.
- Serve the soup hot, garnished with fresh coriander or mint leaves, if desired.
