Ingredients
Chia Pudding Base
- 1/2 cup Chia Seeds
- 1 1/2 cup Coconut Milk full-fat recommended for creaminess

- 3.5 Dates medjool dates, finely chopped

- 4 Walnuts finely chopped
- 1/2 tsp Cinnamon ground
- 1/2 tsp Nutmeg ground
- 2 tbsp Maple Syrup or date syrup, adjust to taste

- 15 Pistachios finely chopped
Instructions
Prepare the Chia Pudding Bases
- Combine 1/2 cup chia seeds and 1 1/2 cups coconut milk in a bowl. Stir well to combine. Cover and refrigerate for at least 3-4 hours, or preferably overnight, to allow the chia seeds to absorb the liquid and create a pudding-like consistency.
Prepare the Chocolate Chia Pudding Layer
- In a separate bowl, combine 1/3 cup chia seeds, 1 cup soy milk, 1/4 cup cocoa powder, 1/4 cup raisins, 3.5 chopped dates, 3.5 chopped figs, 4 chopped walnuts, 1/2 teaspoon cinnamon, 1/2 teaspoon nutmeg, and 2 tablespoons maple syrup. Mix thoroughly until all ingredients are well incorporated.
- Cover and refrigerate for at least 3-4 hours, or preferably overnight, to allow the chia seeds to absorb the liquid and create a pudding-like consistency.
Assemble and Serve
- Once both pudding layers are ready, layer them in individual serving glasses or bowls. Start with a layer of the chocolate chia pudding, followed by a layer of the plain chia pudding. Repeat layers if desired.
- Garnish with finely chopped pistachios.
