Ingredients

- 2 pounds Potatoes peeled and boiled until tender, russet or yukon gold
- 1 large Egg Yolk
- 1/4 cup Heavy Cream
- 2 tbsp Butter melted
- 1/2 cup Cheddar Cheese shredded
- 1.5 tsp Salt or to taste
- 1 tsp Pepper black, freshly ground
Instructions
Prepare the Roasted Garlic
- Roast the peeled garlic cloves in olive oil over medium heat until lightly browned and softened, about 8-10 minutes. Remove from heat and roughly mash into a paste.
Prepare the Mashed Potatoes
- Boil the potatoes until tender. Drain well and mash thoroughly with a fork or potato ricer until completely smooth and lump-free.
Combine Ingredients
- In a small saucepan, gently heat the heavy cream and melted butter over low heat. Stir in the shredded cheddar cheese until melted and smooth. Do not boil.
Mix Potato Mixture
- Add the roasted garlic paste, egg yolk, salt, and pepper to the mashed potatoes. Mix thoroughly.
Incorporate Cheese Sauce
- Stir in the warm cheese sauce until well combined. The mixture should be smooth and pipeable.
Pipe and Bake
