Instructions

Prepare the Creamy Mushroom Sauce

  • Heat butter in a pan. Sauté onions and garlic until softened and lightly browned.
  • Add sliced mushrooms and cook over medium heat until tender and most of the moisture has evaporated.
  • Stir in milk, heavy cream, and grated cheese (if using). Season with rosemary, salt, and pepper. Simmer until slightly thickened.

Cook the Salmon

  • Season salmon fillets lightly with salt and pepper.
  • Heat oil in a pan and cook salmon until cooked through and flaky.

Roast the Potatoes

  • Preheat oven to 400°F (200°C).
  • Wash and halve baby potatoes. Boil for 6-7 minutes until slightly tender.
  • Toss potatoes with olive oil, rosemary, and salt. Roast in the preheated oven for 20-25 minutes, until golden brown and crispy.

Make the Pea Mash

  • Boil frozen peas until tender. Blend until smooth, then stir in sour cream, salt, and pepper.

Prepare the Broccoli

  • Steam broccoli florets until tender-crisp.
  • Melt butter in a pan and saute garlic until fragrant. Add broccoli, salt, pepper and Italian seasoning. Cook for 2-3 minutes until heated through.

Assemble and Serve

  • Spoon pea mash onto plates. Top with roasted potatoes, cooked salmon and broccoli. Generously drizzle with creamy mushroom sauce. Serve immediately.

Recipe Notes

Expert Tips

  • For a richer sauce, use a combination of cream and crème fraîche.
  • Add a splash of white wine to the mushroom sauce for extra depth of flavor.
  • Don't overcook the salmon; it should be flaky and moist.
  • Feel free to add other vegetables to the dish, such as asparagus or green beans.
