  • 10 Chillies mild varieties like california or anaheim; mirchi chillies, red
  • 1/2 cup Cream Cheese full-fat recommended
  • 1/4 tsp Salt or to taste
  • 1/4 tsp Pepper black, for extra spice, freshly, ground, optional

Instructions
 

Prepare the Garlic & Pepper Paste

  • Roast garlic cloves and peppercorns in olive oil in a small oven-safe dish at 375°F (190°C) for 10-12 minutes, or until garlic is softened and slightly browned.
  • Let the mixture cool completely.
  • Using a mortar and pestle (or food processor), grind the roasted garlic and peppercorns into a smooth paste.

Prepare the Chillies

  • Wash and thoroughly dry the red chillies.
  • Cut the chillies in half lengthwise. Remove the membranes and seeds.

Assemble and Bake

  • Preheat oven to 375°F (190°C).
  • Line a baking sheet with parchment paper.
  • In a bowl, combine the garlic-pepper paste and cream cheese. Season with salt and optional freshly ground black pepper.
  • Mix well until thoroughly combined.
  • Gently fill each chili half with the cream cheese mixture.
  • Arrange the filled chillies on the prepared baking sheet.
  • Bake for 13-15 minutes, or until the chillies are slightly softened and the filling is heated through.
