Ingredients
- 1/2 cup Milk
- 1/2 cup Milk condensed
- 3 tbsp Sugar
- 1 tsp Corn Flour
- 1/2 tsp Vanilla Extract
- 1/2 cup Cream
- 1 Pineapple for mix whole
- 1/2 cup Sugar
Instructions
Prepare the Pineapple Chutney
- Puree the chopped pineapple in a blender until completely smooth. No need to add water.
- Cook the pineapple puree with the sugar in a non-stick saucepan over medium heat, stirring frequently, until it thickens to a chutney-like consistency. This will take about 10-15 minutes.
- Remove from heat and let cool completely.
Make the Ice Cream Base
- In a saucepan, gently heat the milk, sweetened condensed milk, and granulated sugar over low heat, stirring until the sugar dissolves completely.
- Whisk the cornflour with a little cold milk to form a smooth slurry. Gradually add this slurry to the warm milk mixture, whisking constantly.
- Continue cooking and stirring until the mixture thickens, coating the back of a spoon. This should take about 2-3 minutes.
- Remove from heat and stir in the vanilla extract. Let cool completely (about 15-20 minutes).
- Whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cooled milk mixture.
- Fold in the cooled pineapple chutney until evenly distributed.
Freeze the Ice Cream
- Pour the ice cream mixture into a freezer-safe container. Cover tightly and freeze for at least 7 hours, or until solid. For best results, stir the mixture every 2 hours for the first 4 hours to prevent large ice crystals from forming.
Serve and Enjoy
- Let the ice cream sit at room temperature for about 10 minutes before scooping to achieve the perfect consistency. Enjoy!
Recipe Notes
Expert Tips for the Best Pineapple Ice Cream
- For a richer flavor, use ripe, sweet pineapple. You can even roast the pineapple beforehand for enhanced caramelized notes.
- If you don't have heavy cream, you can substitute with full-fat coconut milk for a unique twist.
- To prevent ice crystals, use an ice cream maker for a smoother, creamier texture. Follow the manufacturer's instructions for optimal results.
- Garnish with fresh pineapple chunks, toasted coconut flakes, or a drizzle of caramel sauce for an extra touch of elegance.
