Ingredients

- 1 cup Milk whole milk recommended for creaminess
- 1/2 cup Sweetened Milk condensed
- 3 tbsp Sugar granulated
- 1 tbsp Corn Flour dissolved in 2 tablespoons of milk
- 1/2 tsp Vanilla Extract
- 1 cup Heavy Cream cold, for whipping
Instructions
Prepare the Pineapple Puree
- Blend the chopped pineapple until completely smooth. No need to add water.
Cook the Pineapple Mixture
- In a saucepan, combine the pineapple puree and 1/2 cup sugar. Cook over medium heat, stirring frequently, until it thickens to a chutney-like consistency (about 10-15 minutes).
- Remove from heat and let cool completely.
Make the Ice Cream Base
- In a separate saucepan, combine the milk, sweetened condensed milk, and 3 tablespoons of sugar. Heat over low heat, stirring constantly, until the sugar is completely dissolved.
Thicken the Base
- Whisk the cornstarch slurry (cornstarch dissolved in 2 tablespoons of milk) into the warm milk mixture. Cook, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 1-2 minutes). Remove from heat.
Combine and Chill
- Stir in the vanilla extract. Let the mixture cool completely (at least 15-20 minutes).
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cooled milk mixture.
- Gently fold in the cooled pineapple mixture until everything is evenly combined.
Freeze the Ice Cream
