Instructions

Prepare the Pineapple Puree

  • Blend the chopped pineapple until completely smooth. No need to add water.

Cook the Pineapple Mixture

  • In a saucepan, combine the pineapple puree and 1/2 cup sugar. Cook over medium heat, stirring frequently, until it thickens to a chutney-like consistency (about 10-15 minutes).
  • Remove from heat and let cool completely.

Make the Ice Cream Base

  • In a separate saucepan, combine the milk, sweetened condensed milk, and 3 tablespoons of sugar. Heat over low heat, stirring constantly, until the sugar is completely dissolved.

Thicken the Base

  • Whisk the cornstarch slurry (cornstarch dissolved in 2 tablespoons of milk) into the warm milk mixture. Cook, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 1-2 minutes). Remove from heat.

Combine and Chill

  • Stir in the vanilla extract. Let the mixture cool completely (at least 15-20 minutes).
  • In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cooled milk mixture.
  • Gently fold in the cooled pineapple mixture until everything is evenly combined.

Freeze the Ice Cream

  • Pour the ice cream mixture into a freezer-safe container. Freeze for at least 4 hours, stirring every hour to prevent ice crystals from forming. After 4 hours, the ice cream should be mostly frozen but still slightly soft. You can then transfer it to a smaller container for better portioning.
  • Freeze overnight or until completely solid before serving.

Recipe Notes

Expert Tips for the Perfect Pineapple Ice Cream

  • For the best flavor, use ripe, sweet pineapple. Taste the pineapple before using and adjust the amount of sugar in the puree based on its sweetness.
  • Don't skip the step of stirring the ice cream during freezing. This will create a smoother texture and prevent large ice crystals.
  • If your pineapple puree is too thin, you can simmer it for a longer time to achieve the desired consistency.
  • For a richer flavor, you can add a pinch of ground nutmeg or cinnamon to the ice cream base.
