Ingredients
Mango Preparation
- 2 Mangoes ripe, large mangoes
Ice Cream Base
- 200 ml Heavy Cream fresh, cold heavy cream
- 1/2 cup Sugar adjust to your preferred sweetness, granulated
- 1/4 tsp Cardamom Powder ground cardamom (elaichi)
- 1/2 tsp Vanilla Extract
- 5 tbsp Milk whole milk recommended
Mix-ins (Optional)
- 1/4 cup Tutti Frutti candied fruit mix, or your choice of mix-ins
Instructions
Prepare the Mango Puree
- Chop the ripe mangoes into chunks. Combine the mango chunks, sugar, and cardamom powder in a food processor or blender. Blend until completely smooth and creamy.
Whip the Cream
- In a chilled bowl, whip the heavy cream with an electric mixer until soft peaks form. Be careful not to overwhip.
Combine Ingredients
- Gently fold the mango puree into the whipped cream until just combined. Add the vanilla extract and milk, and continue folding until everything is well incorporated. Stir in the tutti frutti (or your chosen mix-ins).
Freeze the Ice Cream
- Pour the ice cream mixture into an airtight container. Cover tightly with plastic wrap, pressing it directly onto the surface to prevent ice crystals from forming. Freeze for at least 45 minutes.
Churn for Smoothness
- Remove the ice cream from the freezer. Use a hand mixer or whisk to break up any ice crystals and ensure a smooth texture. Return the ice cream to the freezer.
- Repeat this process every 45 minutes for 2-3 times for an extra creamy texture.
Final Freeze
- After the last churning, return the ice cream to the freezer for at least 6 hours, or preferably overnight, to allow it to fully harden.
Serve
- Before serving, let the ice cream sit at room temperature for 10-15 minutes to soften slightly. Scoop and enjoy!
