- 1/2 cup Sweetened Milk also known as milkmaid., condensed

- 1 cup Lychee Pulp freshly made is best; canned lychees in syrup can be used (ensure well-drained).
- 1/2 tsp Cardamom Powder ground cardamom; also known as elaichi.
Nuts & Extras
- 1/4 cup Almonds slivered or crushed; lightly toasted for enhanced flavor.
- 2 tbsp Mawa khoya; this ingredient adds richness and creaminess (optional).
- 1 pinch Salt enhances the overall flavor.
- 1 Ice Cream Container suitable for freezing; approximately 1-quart size.
Instructions
Prepare the Lychee Puree
- If using fresh lychees, peel and remove the seeds. Blend the lychee flesh into a smooth puree.
Combine the Ingredients
- In a heavy-bottomed saucepan, combine heavy cream, sweetened condensed milk, and mawa (if using). Heat over medium heat, stirring constantly, until the mixture is warm and slightly thickened. Do not boil.
- Remove from heat and let cool slightly.
- Stir in the lychee puree, cardamom powder, and salt. Fold in the toasted almonds.
Freeze the Ice Cream
- Pour the mixture into your prepared ice cream container. Cover tightly with a lid or plastic wrap, pressing it directly onto the surface of the ice cream to prevent ice crystals from forming.
