  • 1 Eggs large eggs, lightly beaten.

Prepare the Potatoes

  • Wash potatoes thoroughly. Boil in cold, salted water until tender (20-30 minutes). Drain well and peel if necessary.

Rice or Mash the Potatoes

  • While still hot, rice or mash potatoes thoroughly using a ricer or masher. Avoid food processors for a lighter texture. Spread on a clean surface to cool and release steam.

Combine the Ingredients
