For the Halwa

  • 500 gm Carrots finely grated
  • 250 gm Cottage Cheese crumbled, fresh
  • 150 gm Sugar adjust to your sweetness preference, or to taste
  • 100 gm Ghee clarified butter
  • 1 tsp Cardamom Powder elaichi, freshly ground for best flavor
  • 25 gm Cashews for garnish, roughly chopped
  • 2 tbsp Milk whole milk, for extra creaminess (optional)

Prepare the Carrots

  • Heat a large, heavy-bottomed pan or kadai over medium heat. Add the grated carrots and stir continuously for about 10-15 minutes, until they soften and release their moisture. Reduce the heat as needed to prevent burning.

Cook the Halwa

  • Add the desi ghee to the pan with the carrots. Stir well to combine. Add the sugar and cardamom powder. Continue to stir until the sugar dissolves completely and the mixture begins to thicken.

Incorporate the Paneer

  • Reduce the heat to low. Gently stir in the crumbled paneer and optional milk. Continue to cook for another 5-7 minutes, stirring occasionally, until the halwa reaches your desired consistency. The paneer should melt and create a creamy texture.

Garnish and Serve

  • Remove from heat and garnish generously with chopped cashews, pistachios and/or rose petals. Serve warm or at room temperature.
