Ingredients
- 1 tsp Butter or sauce for alfredo sauce, unsalted
- 2 tsp All-Purpose Flour maida, or maida maida
- 2 cup Milk
- 1/4 cup Mozzarella Cheese or cheese grated parmesan cheese, or parmesan
- 1/4 cup Cream Cheese
- 1 tsp Garlic grated
- 1/4 tsp Pepper black
- 1/4 tsp Chilli Flakes
- 1/4 tsp Oregano Flakes
- 1 tsp Salt or as per taste
- 1/2 tsp Sugar
- 1 tsp Butter or tempering for tempering, unsalted
- 2 tsp Garlic chopped
- 2 Chilli green, slits
- 1/4 slice Carrot thin
- 1/4 tsp Chilli Flakes
- 1/4 tsp Oregano Flakes
- 2 florets Cauliflower for boiling
- 1/2 tsp Salt or as per taste
- Water boil as required
- Cheddar Cheese or garnishing for garnishing grated as required
Instructions
Prepare the Cauliflower
- Bring 1 cup of water to a boil in a saucepan. Add cauliflower florets and salt. Cook for 7-8 minutes, or until tender-crisp. Drain well and set aside.
Make the Garlic-Carrot Sauté
- In a small pan, melt 1 tbsp butter over medium heat. Add minced garlic and green chili; sauté for 1 minute. Add sliced carrots, red pepper flakes, and oregano. Sauté until carrots are slightly softened, about 3-4 minutes. Set aside.
Prepare the Alfredo Sauce
- In a medium saucepan, melt 1 tbsp butter. Whisk in flour and cook for 1 minute. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
- Reduce heat to low. Stir in mozzarella cheese, cream cheese, garlic powder, salt, pepper, and sugar. Cook, stirring occasionally, until cheese is melted and sauce is thickened (about 5 minutes).
Combine and Serve
- Add the cooked cauliflower florets and the garlic-carrot sauté to the Alfredo sauce. Stir gently to combine. Simmer for 2 minutes to heat through. Garnish with shredded cheddar cheese and fresh parsley (optional).
- Serve hot over pasta, rice, or as a side dish.
