Instructions

Prepare the Cauliflower

  • Bring 1 cup of water to a boil in a saucepan. Add cauliflower florets and salt. Cook for 7-8 minutes, or until tender-crisp. Drain well and set aside.

Make the Garlic-Carrot Sauté

  • In a small pan, melt 1 tbsp butter over medium heat. Add minced garlic and green chili; sauté for 1 minute. Add sliced carrots, red pepper flakes, and oregano. Sauté until carrots are slightly softened, about 3-4 minutes. Set aside.

Prepare the Alfredo Sauce

  • In a medium saucepan, melt 1 tbsp butter. Whisk in flour and cook for 1 minute. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
  • Reduce heat to low. Stir in mozzarella cheese, cream cheese, garlic powder, salt, pepper, and sugar. Cook, stirring occasionally, until cheese is melted and sauce is thickened (about 5 minutes).

Combine and Serve

  • Add the cooked cauliflower florets and the garlic-carrot sauté to the Alfredo sauce. Stir gently to combine. Simmer for 2 minutes to heat through. Garnish with shredded cheddar cheese and fresh parsley (optional).
  • Serve hot over pasta, rice, or as a side dish.

Recipe Notes

Expert Tips for the Best Cauliflower Alfredo

  • For extra creaminess, use full-fat milk and cream cheese.
  • Don't overcook the cauliflower; it should be tender-crisp, not mushy.
  • If the sauce is too thick, add a tablespoon of milk at a time until you reach your desired consistency.
  • Feel free to experiment with other cheeses, such as Parmesan or Asiago.
