  • 1/2 cup Vermicelli
  • 1/4 cup Sugar adjust to taste
  • 1/4 cup Water
  • 1/2 cup Pistachios chopped, or use a mix of chopped pistachios and almonds

Prepare the China Grass Mixture

  • Bring the milk to a boil in a thick-bottomed pan, stirring constantly until it reduces to about half its original volume. Add the China grass and stir well until completely dissolved. Stir in sugar and cardamom powder until dissolved. Set aside to cool slightly.

Prepare the Vermicelli Layer

  • In a small saucepan, combine vermicelli, sugar, and water. Bring to a boil, then reduce heat and simmer until the vermicelli is cooked through but still slightly firm. Stir in a pinch of cardamom powder and optional food coloring if desired.

Assemble and Chill

  • Lightly grease a small rectangular dish or mold with oil. Spread half of the cooked vermicelli evenly over the bottom. Pour the cooled China grass mixture over the vermicelli. Top with remaining vermicelli and sprinkle generously with chopped pistachios.
  • Refrigerate for at least an hour or until completely set. Serve chilled.
