  • Wash the China oranges thoroughly and pat them dry.
  • Place the whole oranges in a wide pan and cook for 5 minutes over medium heat, turning occasionally to soften the peel. This helps the oranges absorb the pickling liquid later.
  • Cut each orange in half and remove the seeds, reserving the juice.

  • In a saucepan, combine the reserved orange juice, sugar, salt, and whole garam masala. Cook over medium heat until the sugar dissolves completely.

  • Stir in the lemon juice and red chili powder. Cook for another 2 minutes to blend the flavors.
  • Remove and discard the whole garam masala spices.
