Ingredients
For the Drumsticks
For the Curry
- 1 cup Cottage Cheese cubed, indian cottage cheese
- 3/4 cup Yogurt beaten to remove lumps, full-fat yogurt or curd, plain
- 1/2 cup Gram Flour besan
- 1 tbsp Ginger finely julienned, fresh ginger
- 2 tbsp Cilantro finely chopped; some for garnish, fresh cilantro, some added to curry
- 1 tbsp Clarified Butter clarified butter; can substitute with vegetable oil
- 1/2 tsp Asafoetida hing (optional)
- 1 tsp Salt to taste
- 1/2 tsp Turmeric haldi
- 1 tsp Vegetable Oil for frying a portion of ginger
- 1 cup Water additional water, as needed for desired consistency
Instructions
Prepare the Drumsticks
- Peel and boil the drumstick in 2 cups of water until tender, about 15-20 minutes. Set aside, reserving the cooking liquid.
Make the Batter
- In a bowl, whisk together the yogurt, gram flour, and 1 cup of water until smooth and lump-free.
Cook the Curry
- Heat ghee (or oil) in a heavy-bottomed pot or pan. Add asafoetida (if using), then pour in the gram flour batter, stirring constantly to prevent sticking. Add salt and turmeric powder, mixing well.
Simmer and Thicken
- Add the reserved drumstick cooking liquid and the boiled drumstick pieces. Cook for 10-15 minutes, stirring occasionally, until the sauce thickens slightly and the color changes.
Add Paneer and Ginger
- Stir in the paneer cubes and half of the julienned ginger. Add more water if needed to reach your desired consistency. Cook for a few minutes until heated through and the flavors meld.
Garnish and Serve
- Garnish with the remaining julienned ginger (fried lightly in oil until golden) and chopped cilantro. Serve hot with rice, roti, or naan.
