Ingredients
For the Cardamom Panna Cotta
- 200 ml Heavy Cream amul or similar brand
- 200 ml Milk full fat
- 115 gm Sugar granulated
- 1 tsp Cardamom ground
- 2 tsp Gelatin Powder bloom the gelatin before adding
- 2 tbsp Water
For the Pomegranate Reduction
- 1 Pomegranate fresh, about 1 cup of arils
- 2 tsp Corn Flour
- 60 ml Water
- 2-3 tbsp Sugar to taste, adjust to your preference
For Garnishing
- 1 tbsp Pomegranate Seeds
- 2-3 Mint Leaves fresh
Instructions
Prepare the Gelatin
- Bloom the gelatin by sprinkling it over 2 tablespoons of cold water in a small bowl. Let it sit for 20 minutes to soften.
Make the Panna Cotta
- Combine heavy cream, whole milk, and 115g of sugar in a saucepan. Heat over medium heat, stirring frequently, until the sugar dissolves and the mixture just begins to simmer.
- Remove from heat and stir in the ground cardamom.
- In a separate bowl, whisk together the bloomed gelatin and 2 tablespoons of the warm cream mixture until smooth.
- Pour the gelatin mixture into the remaining warm cream mixture and whisk vigorously to combine.
Set the Panna Cotta
- Pour the panna cotta mixture into individual ramekins or small serving glasses. Refrigerate for at least 4 hours, or preferably overnight, until set.
Make the Pomegranate Reduction
- Remove pomegranate arils from a pomegranate and strain the juice through a fine-mesh sieve, discarding the seeds.
- In a small saucepan, whisk together cornstarch and 2-3 tablespoons of sugar. Slowly whisk in the pomegranate juice.
- Cook over medium heat, stirring constantly, until the reduction thickens to a syrupy consistency and darkens in color. Remove from heat and let cool.
Assemble and Serve
- Carefully unmold the panna cotta onto serving plates. Drizzle generously with the pomegranate reduction. Garnish with fresh pomegranate seeds and mint leaves. Serve immediately and enjoy!
