Ingredients
For the Sweet Potatoes
- 2 Potatoes medium, peeled and chopped, sweet
For the Kheer
- 1 ltr Milk
- 1/4 cup Sugar or to taste; adjust based on sweetness of sweet potatoes and personal preference. honey can be substituted.
- 2 tbsp Ghee
- 1/4 cup Cashews roughly chopped
- 1 tbsp Almonds for garnish, sliced
- 1 tsp Cardamom Powder ground cardamom (elaichi)
- 1 tbsp Coconut freshly grated or desiccated, shredded
Instructions
Prepare the Sweet Potatoes
- Wash and peel the sweet potatoes. Chop them into small, roughly equal-sized pieces.
Cook the Sweet Potatoes
- Boil the chopped sweet potatoes until tender. This should take about 15-20 minutes, or until easily pierced with a fork. Drain well and set aside.
Sauté the Sweet Potatoes
- Heat the desi ghee in a pan or pot over medium heat. Add the boiled sweet potatoes and sauté until lightly golden brown, stirring occasionally. This will enhance their flavor and create a pleasant texture.
Simmer the Kheer
- Pour the milk into the pan. Bring it to a gentle boil. Reduce heat to low. Add the sugar, cardamom powder, and sautéed sweet potatoes. Stir well and simmer for 10-15 minutes, or until the kheer slightly thickens, stirring frequently to prevent sticking.
Add Nuts and Finish
- Stir in the chopped cashews. Continue to simmer for another 2-3 minutes. Remove from heat.
Serve
- Garnish with sliced almonds and shredded coconut. Let the kheer cool slightly before serving chilled or warm, according to preference.
