Ingredients
Pasta & Veggies
- 250 gm Pasta any short pasta shape, or farfalle, rotini, such as penne
- 1 Onion finely chopped, medium
- 1 Bell Peppers finely chopped (any color)
- 3 Chili finely chopped (adjust to taste), green
Sauce & Seasoning
- 1/2 cup Mayonnaise
- 1/2 cup Cheese grated cheddar, mozzarella, or your preferred blend
- 1 tsp Pepper black, freshly ground, or to taste
- 1.5 tsp Salt or to taste
Instructions
Prepare the Pasta
- Cook pasta according to package directions in boiling salted water with 1 tbsp of oil. Drain well and set aside.
Sauté Vegetables
- Heat oil (and butter, if using) in a large skillet or wok over medium-high heat. Add the chopped onion and sauté until softened, about 2-3 minutes. Add bell pepper and green chilies; sauté for another 2-3 minutes until slightly tender.
Season and Combine
- Stir in salt and freshly ground black pepper. Add the cooked pasta and toss to combine.
Add Cheese and Mayonnaise
- Add the mayonnaise and stir gently to coat the pasta. Reduce heat to low, stir in the grated cheese, and cook until melted and creamy, about 1-2 minutes, stirring constantly to prevent sticking or burning. Do not let it boil.
Garnish and Serve
- Remove from heat and stir in the fresh coriander. Serve immediately, garnished with extra cheese and coriander if desired.
