Instructions

Prepare the Pasta

  • Cook pasta according to package directions in boiling salted water with 1 tbsp of oil. Drain well and set aside.

Sauté Vegetables

  • Heat oil (and butter, if using) in a large skillet or wok over medium-high heat. Add the chopped onion and sauté until softened, about 2-3 minutes. Add bell pepper and green chilies; sauté for another 2-3 minutes until slightly tender.

Season and Combine

  • Stir in salt and freshly ground black pepper. Add the cooked pasta and toss to combine.

Add Cheese and Mayonnaise

  • Add the mayonnaise and stir gently to coat the pasta. Reduce heat to low, stir in the grated cheese, and cook until melted and creamy, about 1-2 minutes, stirring constantly to prevent sticking or burning. Do not let it boil.

Garnish and Serve

  • Remove from heat and stir in the fresh coriander. Serve immediately, garnished with extra cheese and coriander if desired.

Recipe Notes

Expert Tips

  • For extra creaminess, add a splash of milk or cream along with the mayonnaise.
  • Feel free to experiment with different types of cheese. A blend of cheddar and Monterey Jack is delicious!
  • Add some cooked protein, such as grilled chicken or shrimp, for a heartier meal.
  • If you prefer a spicier dish, add more green chilies or a pinch of red pepper flakes.
