Ingredients
For the Pesto
- 3 cup Kale roughly chopped
- 1 ripe Avocados flesh only
- 1/2 cup Walnuts
- 1/2 cup Lemon Juice
- 1 tbsp Pepper freshly ground, black
- 2 tbsp Olive Oil extra virgin
- 1 tbsp Chili Paste adjust to taste, green
- 2 clove Garlic
- 2 tbsp Parmesan Cheese grated
For the Pasta
- 1 box Wheat Pasta whole wheat preferred
- 1 cup Mozzarella Cheese shredded
- 1/2 tsp Salt or to taste
- 4 cup Water for boiling pasta
Instructions
Prepare the Pasta
- Cook pasta according to package directions in a large pot of salted boiling water. Drain and set aside.
Make the Pesto
- While the pasta cooks, combine kale, avocado, walnuts, lemon juice, black pepper, olive oil, green chili paste, garlic, and Parmesan cheese in a food processor. Blend until smooth and creamy.
Combine and Serve
- Add the cooked pasta to a large bowl. Pour the pesto over the pasta and toss to coat evenly. Sprinkle with mozzarella cheese. Serve warm or cold as a pasta salad.
