Ingredients
Ash Gourd
- 300 gm Ash Gourd
Yogurt Mixture
- 2 cup Yogurt fresh, made from skimmed milk
- 2 Tbsp Coconut grated
- 3 Chilies green
- Salt to taste
- 1 handful Coriander Leaves chopped
Tempering
- 1/2 tsp Oil
- 1/4 tsp Mustard Seeds
- 1 handful Curry Leaves chopped
Instructions
- Choose a firm, mature ash gourd. Peel and cut it into small rectangular pieces.
- Steam the ash gourd pieces until slightly softened but still firm. This can be done in a steamer or on idli plates. Avoid overcooking. Set aside to cool.
- In a blender, grind the coconut and green chilies with salt, adding minimal water, until a smooth paste forms.
- In a bowl, combine the cooled ash gourd, ground coconut-chili paste, chopped coriander leaves, and fresh curd. Mix well.
- Heat the oil in a small pan. Add the mustard seeds and let them splutter. This releases their nutty aroma. Add the curry leaves and sauté briefly until fragrant.
- Pour the tempering over the raitha and stir gently. Refrigerate until ready to serve. This allows the flavors to meld beautifully.
