  • Choose a firm, mature ash gourd. Peel and cut it into small rectangular pieces.
  • Steam the ash gourd pieces until slightly softened but still firm. This can be done in a steamer or on idli plates. Avoid overcooking. Set aside to cool.

  • In a blender, grind the coconut and green chilies with salt, adding minimal water, until a smooth paste forms.
  • In a bowl, combine the cooled ash gourd, ground coconut-chili paste, chopped coriander leaves, and fresh curd. Mix well.
