Instructions

Prepare the Spinach

  • Blanch the spinach leaves in boiling water for 2 minutes. Immediately transfer to an ice bath to stop the cooking process. Squeeze out excess water and finely chop the spinach.

Blend the Spinach (Optional)

  • For a smoother raita, you can lightly blend the blanched spinach. Alternatively, leave it chopped for a more textured consistency.

Combine Ingredients

  • In a bowl, thoroughly whisk the yogurt until smooth and creamy.
  • Add the chopped or blended spinach, cumin powder, chili powder, lemon juice, and salt to the yogurt. Mix everything well until thoroughly combined.

Adjust Consistency and Serve

  • If the raita is too thick, add a tablespoon of water at a time until you reach your desired consistency. Taste and adjust seasonings as needed. Refrigerate for at least 30 minutes to allow the flavors to meld before serving. Serve chilled as a side dish or dip.
