Instructions

Prepare the Peepal Leaves

  • Bring a small pot of water to a boil. Add the peepal leaves and blanch for 2-3 minutes, until slightly softened. Remove and immediately rinse under cold water to stop the cooking process. Chop the leaves into small pieces.

Make the Raita

  • In a medium bowl, whisk together the plain yogurt, red chili powder, roasted cumin powder, black salt, and sugar until well combined.

Combine and Serve

  • Gently fold in the chopped peepal leaves, cucumber, tomato, onion, and coriander leaves. Mix well to combine all ingredients evenly. Refrigerate for at least 30 minutes to allow the flavors to meld before serving chilled.

Recipe Notes

Expert Tips for the Best Peepal Leaf Raita

  • For the best flavor, use thick, full-fat yogurt. Greek yogurt is also a great option.
  • Adjust the amount of red chili powder to your preferred level of spiciness.
  • If you don’t have black salt, you can omit it or substitute with a pinch of regular salt.
  • For a creamier raita, you can blend a portion of the ingredients before adding the remaining chopped vegetables and herbs.
