Instructions

Prepare the Honey-Cinnamon Mixture

  • Combine 1/4 cup honey and 1/2 teaspoon ground cinnamon in a small bowl. Set aside.

Prepare the Flan Custard

  • In a separate bowl, whisk together 3 large eggs, 1 1/2 cups low-fat milk, 1/4 cup honey, and 1.5 teaspoons vanilla extract until well combined.

Grease the Ramekins

  • Lightly grease 6-8 ramekins (approximately 6-ounce capacity) with 1-2 teaspoons of vegetable oil.

Assemble the Flan

  • Spoon 1 tablespoon of the honey-cinnamon mixture into the bottom of each ramekin.
  • Carefully pour the egg mixture over the honey-cinnamon layer in each ramekin.

Bake in a Water Bath

  • Preheat oven to 320°F (160°C). Place the ramekins in a larger baking dish. Pour enough hot water into the baking dish to come halfway up the sides of the ramekins (creating a water bath).
  • Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. The flan should be set but still slightly jiggly in the center.

Cool and Chill

  • Remove the ramekins from the water bath and let them cool completely at room temperature. Then, refrigerate for at least 4 hours, or preferably overnight, to allow the flan to fully set and chill.

Recipe Notes

Expert Tips for the Perfect Honey Flan:

  • For a smoother flan, strain the egg mixture through a fine-mesh sieve before pouring into the ramekins.
  • Don't overbake the flan! It should be set around the edges but slightly jiggly in the center. Overbaking will result in a dry flan.
  • Use high-quality honey for the best flavor. The type of honey you use can affect the final taste.
  • For easier unmolding, run a thin knife or spatula around the edges of the flan before inverting it onto a serving plate.
