  • 1 cup Sugar granulated
  • 1/4 cup Water to prevent burning

Prepare the Caramel

  • Combine sugar and water in a medium saucepan over medium heat. Cook, swirling occasionally, until the sugar dissolves and turns a deep amber color. Carefully pour the caramel into the bottom of a 9-inch flan dish or ramekins, tilting to coat the bottom and sides evenly.

Make the Custard

  • In a blender, combine sweetened condensed milk, whole milk, eggs, and vanilla extract (if using). Blend until completely smooth and frothy.

Bake the Flan

  • Preheat your oven to 350°F (175°C). Place the flan dish in a larger baking pan. Carefully pour enough boiling water into the larger pan to come halfway up the sides of the flan dish (this creates a water bath). Bake for 1 hour and 15 minutes to 1 hour and 30 minutes, or until the flan is set but still slightly jiggly in the center.

Cool and Chill

  • Remove the flan from the oven and let it cool completely in the water bath. Once cooled, cover and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the flan to set completely.

Unmold and Serve

  • To unmold, run a thin knife or spatula around the edge of the flan to loosen it. Place a serving plate upside down over the flan dish. Quickly and carefully invert the dish onto the plate. Gently lift the flan dish, and if the flan doesn't release easily, run the knife around the edge again and gently tap the bottom of the dish. Serve immediately and enjoy!
