Ingredients
For the Baked Vegetables
- 1 cup Vegetables and carrots. alternatively, cauliflower florets, chopped sweet potato, green beans, mixed, mushrooms, peas, use 1 cup of diced potatoes.
- 1 tbsp Butter
For the Green Chutney
- 1/4 cup Mint leaves
- 1/4 cup Cilantro
- 1 Chili Pepper green
- 1/2 tsp Salt to taste
- 1 tbsp Honey
For the Honey Sauce
- 2 tbsp Honey
- 1/2 tsp Lemon Juice
- 1 tsp Paprika
For Assembly
- 2 tbsp Yogurt hung
- 2 tbsp Mayonnaise
- 1 tbsp Schezwan Sauce
- 2 tbsp Chutney green
- 1.5 tsp Salt or to taste
- 4 Papdi round crackers, small
For Garnishing
- Optional Potato Fries
- Optional Pomegranate Seeds
Instructions
Prepare the Baked Vegetables
- Preheat oven to 350°F (180°C). Toss the mixed vegetables with 1 tbsp butter and spread on a baking sheet. Bake for 15-20 minutes, or until tender and slightly browned.
Make the Green Chutney
- Combine mint leaves, coriander leaves, green chili, 1/2 tsp salt, and 1 tbsp honey in a blender or food processor. Blend until smooth and set aside.
Make the Honey Sauce
- In a small saucepan, combine 2 tbsp honey and 1 tsp paprika. Heat over low heat for 1 minute. Stir in 1/2 tsp lemon juice. Remove from heat and let cool.
Assemble the Chaat
- In a bowl, gently combine the baked vegetables, hung curd, mayonnaise, and schezwan sauce.
- Layer the mixture in a serving dish, alternating with a thin layer of honey sauce and green chutney. Repeat the layers to create a small tower. Top with papdi.
Garnish and Serve
- Garnish with potato fries and pomegranate seeds (optional). Drizzle additional honey sauce and green chutney around the chaat for extra flavor and visual appeal. Serve immediately.
