Ingredients
For the Bottle Gourd Halwa:
- 1 kg Bottle Gourd lauki, peeled and grated
- 300 gm Sugar adjust to taste
- 1/2 tsp Cardamom Powder elaichi
- 1 tbsp Ghee
For the Chocolate Cream:
- 100 ml Heavy Cream fresh
- 200 gm Chocolate dark, finely chopped
Garnish:
- 1/4 cup Almonds slivered
Instructions
Prepare the Bottle Gourd Halwa
- Heat the ghee in a pan over medium heat. Add the grated bottle gourd and sauté until it softens and releases its water, about 5-7 minutes.
- Add the sugar and stir well. Continue to cook, stirring frequently, until all the water evaporates and the mixture thickens into a glossy halwa, about 15-20 minutes.
- Stir in the cardamom powder and remove from heat. Let the halwa cool completely.
Prepare the Chocolate Cream
- In a separate saucepan, heat the heavy cream over low heat until it just begins to simmer. Remove from heat immediately.
- Add the chopped dark chocolate and stir gently until it melts completely and forms a smooth, glossy mixture.
Assemble the Fudge
- Lightly grease an 8x8 inch square baking dish or line it with parchment paper.
- Pour the chocolate cream into the prepared dish and spread evenly.
- Once the chocolate layer is set (about 15 minutes in the refrigerator), spread the cooled bottle gourd halwa evenly over the chocolate.
- Using a sharp knife, lightly score the fudge into even squares. Top each square with a slivered almond.
- Refrigerate for at least 2 hours, or until firm, before serving.
