Instructions

Prepare the Bottle Gourd Halwa

  • Heat the ghee in a pan over medium heat. Add the grated bottle gourd and sauté until it softens and releases its water, about 5-7 minutes.
  • Add the sugar and stir well. Continue to cook, stirring frequently, until all the water evaporates and the mixture thickens into a glossy halwa, about 15-20 minutes.
  • Stir in the cardamom powder and remove from heat. Let the halwa cool completely.

Prepare the Chocolate Cream

  • In a separate saucepan, heat the heavy cream over low heat until it just begins to simmer. Remove from heat immediately.
  • Add the chopped dark chocolate and stir gently until it melts completely and forms a smooth, glossy mixture.

Assemble the Fudge

  • Lightly grease an 8x8 inch square baking dish or line it with parchment paper.
  • Pour the chocolate cream into the prepared dish and spread evenly.
  • Once the chocolate layer is set (about 15 minutes in the refrigerator), spread the cooled bottle gourd halwa evenly over the chocolate.
  • Using a sharp knife, lightly score the fudge into even squares. Top each square with a slivered almond.
  • Refrigerate for at least 2 hours, or until firm, before serving.

Recipe Notes

Expert Tips for Perfect Chocolate Bottle Gourd Fudge

  • For a richer flavor, use high-quality dark chocolate with a high cocoa content (70% or higher).
  • If your bottle gourd releases too much water, increase the cooking time to ensure a thick halwa.
  • Adjust the amount of sugar according to your preference and the sweetness of the bottle gourd.
  • For an extra special touch, garnish with chopped pistachios or a dusting of cocoa powder.
