  • Prepare the dough using whole wheat flour and set aside to rest. This allows the gluten to relax, resulting in softer parathas.

  • Boil the potatoes until tender, then drain and mash them thoroughly. Set the mashed potatoes aside.
  • Heat ghee in a pan over medium heat. Add asafoetida and let it sizzle for a few seconds to release its aroma.

  • Add the cumin seeds and roast until fragrant. Then, add the roasted coriander powder and sauté briefly.
  • Add the mashed potatoes to the pan, followed by the red chili powder, garam masala, dry mango powder, and salt.
  • Mix all the ingredients well, ensuring the spices are evenly distributed throughout the potato mixture. Remove from heat and let the filling cool.
  • Take a portion of the dough and roll it into a circle. Place a spoonful of the potato filling in the center.
  • Bring the edges of the dough together to enclose the filling completely, then flatten the stuffed dough ball.
  • Roll out the filled dough into a thin circle. Heat a flat griddle or tawa over medium heat.
  • Cook the paratha on the hot tawa, flipping it once golden brown spots appear. Apply ghee to both sides while cooking for a crispy and flavorful paratha.
