Instructions

Prepare the Potatoes

  • Wash and hard-boil the baby potatoes until tender. Peel and set aside.

Marinate the Potatoes

  • In a large bowl, combine the boiled potatoes with 1 teaspoon of salt, 2 tablespoons of lemon juice, and 1/2 teaspoon of turmeric powder. Mix well to coat the potatoes evenly and set aside for at least 30 minutes.

Sauté Aromatics & Spices

  • Heat the oil in a wok or large pan over medium heat. Add the cumin seeds and fenugreek seeds. Once they begin to splutter, add the finely chopped onion and sauté until softened. Stir in the ginger-garlic paste and cook for another minute until fragrant.

Combine and Simmer

  • Add the marinated potatoes and green chilies to the pan. Stir well to combine and cook for about 2 minutes. Now, add the red chili powder, black pepper, amchur powder (dried mango powder), and garam masala. Stir and cook for another 5 minutes, allowing the flavors to meld together.

Garnish and Serve

  • Remove from heat and garnish with freshly chopped coriander leaves. Serve hot as a delicious side dish with roti, naan, or rice. Enjoy!

Recipe Notes

Expert Tips for the Best Chatpata Aloo:

  • For extra flavor, consider adding a pinch of asafoetida (hing) along with the cumin and fenugreek seeds.
  • Adjust the amount of red chili powder to control the spice level according to your preference.
  • If you don't have amchur powder, you can substitute with a teaspoon of lemon juice for a similar tangy flavor.
  • For a crispier texture, you can lightly pan-fry the potatoes before adding them to the spice mixture.
