Ingredients
Potatoes & Aromatics
- 1 kg Baby Potatoes
- 2 tbsp Ginger-Garlic Paste
- 1 medium Onion finely chopped
Spices & Seasonings
- 1 tsp Salt or to taste
- 1/2 tsp Turmeric Powder haldi
- 2 tbsp Lemon Juice
- 1 tsp Cumin Seeds jeera
- 1/2 tsp Fenugreek Seeds methi dana
- 2 tsp Chili Powder red
- 1 tsp Pepper black, ground
- 1 tsp Dry Mango Powder dried mango powder
- 2 Chilies finely chopped, green
- 1 tsp Garam Masala
Other
- 2 tbsp Oil vegetable or canola
Garnish
- 1 tbsp Coriander finely chopped
Instructions
Prepare the Potatoes
- Wash and hard-boil the baby potatoes until tender. Peel and set aside.
Marinate the Potatoes
- In a large bowl, combine the boiled potatoes with 1 teaspoon of salt, 2 tablespoons of lemon juice, and 1/2 teaspoon of turmeric powder. Mix well to coat the potatoes evenly and set aside for at least 30 minutes.
Sauté Aromatics & Spices
- Heat the oil in a wok or large pan over medium heat. Add the cumin seeds and fenugreek seeds. Once they begin to splutter, add the finely chopped onion and sauté until softened. Stir in the ginger-garlic paste and cook for another minute until fragrant.
Combine and Simmer
- Add the marinated potatoes and green chilies to the pan. Stir well to combine and cook for about 2 minutes. Now, add the red chili powder, black pepper, amchur powder (dried mango powder), and garam masala. Stir and cook for another 5 minutes, allowing the flavors to meld together.
Garnish and Serve
- Remove from heat and garnish with freshly chopped coriander leaves. Serve hot as a delicious side dish with roti, naan, or rice. Enjoy!
