- Add the salt, turmeric powder, red chili powder, black pepper, cumin seeds, and garlic paste to the mashed potatoes. Mix well to combine all the spices evenly.
- Shape the potato mixture into small patties or chops. Slightly flatten each patty.
- Spread the besan (gram flour) on a plate. Coat each potato patty evenly with the besan, ensuring it's fully covered.
- Heat the oil in a large skillet over medium heat. The oil is ready when a small pinch of besan sizzles gently.
- Carefully place the coated potato patties in the hot oil. Do not overcrowd the skillet. Fry in batches if necessary.
- Fry the patties for about 3-4 minutes on each side, or until they turn golden brown and crispy. Turning them ensures even cooking and a beautiful color.
- Remove the crispy Aloo Chop from the skillet and place them on a plate lined with paper towels. This helps absorb excess oil.
