Ingredients
 

For the Sandwich Filling:

  • 2 slices Bread use your favorite bread; sourdough or texas toast work well.
  • 1 Banana ripe, but firm banana is ideal.
  • 3 tbsp Peanut Butter
  • 1 cup Marshmallows mini marshmallows work best.

For the Batter:

  • 1 cup Breakfast Cereal crushed cornflakes or your favorite cereal.
  • 2 cup Oil vegetable oil, for deep frying.

Instructions
 

Prepare the Sandwich

  • Spread peanut butter on both slices of bread. Top one slice with banana slices and marshmallows.

Make the Batter

  • In a bowl, whisk together the flour, sugar, salt, cinnamon, egg, and milk until smooth. The consistency should resemble pancake batter.

Coat and Fry

  • Dip the assembled sandwich into the batter, ensuring it's fully coated. Then, generously coat the battered sandwich in crushed cereal.
  • Heat the oil in a deep fryer or large pot to 350°F (175°C). Carefully place the cereal-coated sandwich in the hot oil and fry until golden brown and crispy, about 2-3 minutes per side.
  • Remove the sandwich from the oil and place it on a wire rack to drain excess oil.

Serve

  • Serve immediately. Garnish with extra marshmallows, a dollop of whipped cream, or a scoop of ice cream, if desired.

  • For extra crunch, lightly toast the bread before assembling the sandwich.
  • Don't overcrowd the pan when frying; this will lower the oil temperature and result in soggy sandwiches.
