Instructions

Prepare the Apple Filling

  • Peel, core, and thinly slice the apples. In a medium saucepan, combine the apples, brown sugar, cinnamon, and nutmeg (if using). Cook over medium-low heat for 15-20 minutes, stirring occasionally, until the apples are softened and caramelized.

Make the Orange Sauce

  • In a small saucepan, combine the orange juice, sugar, butter, and orange zest (if using). Bring to a simmer over medium heat, stirring until the sugar dissolves. Reduce heat to low and simmer for 10-15 minutes, or until the sauce has thickened slightly.

Make the Crepe Batter

  • In a large bowl, whisk together the flour, eggs, milk, baking powder, salt, and sugar until smooth. Stir in the melted butter.

Cook the Crepes

  • Heat a lightly oiled crepe pan or non-stick skillet over medium heat. Pour 1/4 cup of batter onto the hot pan and swirl to create a thin crepe. Cook for 1-2 minutes per side, or until golden brown.

Assemble the Crepes

  • Place a spoonful of the caramelized apples in the center of each crepe. Fold the crepe in half, then in half again to form a triangle or roll it up tightly.

Serve

  • Arrange the crepes on a serving plate. Drizzle generously with the warm orange sauce and serve immediately. Optional: Dust with powdered sugar or serve with a scoop of vanilla ice cream.

Recipe Notes

Expert Tips for Perfect Crepes

  • For extra-thin crepes, use a slightly thinner batter and cook them for a shorter time.
  • Don't overcrowd the pan when cooking the crepes; work in batches to ensure even cooking.
  • If the apples are too tart, add a pinch of extra brown sugar to the filling.
  • For a richer orange sauce, use freshly squeezed orange juice and zest.
