Ingredients
For the Green Chutney
- 1/2 cup Coriander packed
- 2-3 Chilies adjust to taste, green
- 2 clove Garlic
- 1/4 cup Split Chickpea or peanuts; you can buy pre-roasted or roast yourself in a dry pan, roasted
- 1/2 tsp Salt or to taste
For the Sandwich Filling
- 1 Cucumber thinly sliced
- 1/2 Onion thinly sliced
- 2 Tomatoes thinly sliced
- 1 Beetroot boiled and thinly sliced
- 1/2 Bell Peppers finely chopped (any color)
- 6 slices Bread brown
- 2 tbsp Butter softened
- 1/4 cup Cheese grated, processed
- 1 tsp Chaat Masala
Instructions
Make the Green Chutney
- Grind together coriander leaves, green chilies, garlic, roasted chana dal (or peanuts), and salt until you achieve a thick chutney consistency.
Assemble the Sandwiches
- Spread softened butter on one side of each bread slice.
- Spread a layer of green chutney on one buttered slice of bread.
- Sprinkle with chaat masala.
- Layer the sliced potatoes (if using), cucumber, tomatoes, bell pepper, and beetroot on top of the chutney.
- Sprinkle again with chaat masala and generously spread grated cheese.
- Top with another slice of bread, butter-side up, and add chutney on top as well.
Grill the Sandwiches
- Place the sandwiches in a grill pan or panini press. Grill for 5-7 minutes, or until the cheese is melted and the bread is golden brown and crispy.
