Ingredients
For the Filling
- 5 oz Spinach about 1 bunch, fresh
- 1/2 cup Corn Kernels fresh or frozen
- 3 slices Cheese processed
- 1/2 Onion finely chopped, medium-sized
- 1 tbsp Vegetable Oil
- 2 clove Garlic minced
- 1/4 tsp Pepper black, or to taste
- 1 tsp Salt or to taste
- 1/4 tsp Sugar optional, to reduce spinach bitterness
Instructions
Prepare the Spinach Filling
- Wash and thoroughly dry 5 oz of fresh spinach. Chop the spinach into 1/2-inch pieces.
- Finely chop 1/2 of a medium onion. Mince 2 cloves of garlic. Heat 1 tablespoon of vegetable oil in a pan. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the chopped onion and a pinch of salt. Cook until the onions become translucent.
- Add the chopped spinach to the pan, mix well, cover, and cook until the spinach wilts. Stir in 1/4 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of sugar (optional). Add 1/2 cup of corn kernels and cook for another minute.
- Taste and adjust seasoning as needed. The mixture should be slightly under-seasoned as the cheese will add salt.
- Divide the spinach and corn mixture into four equal portions.
Assemble and Grill the Sandwiches
- Grate the processed cheese and divide it into four equal portions. Spread butter on one side of each bread slice.
- Place one bread slice, butter-side down, in the sandwich maker. Add a portion of the spinach and corn filling, followed by a portion of the grated cheese. Top with another bread slice, butter-side up. Grill according to the sandwich maker’s instructions until the bread is golden brown and the cheese is melted and gooey.
- Alternatively, if you don’t have a sandwich maker, butter both sides of each bread slice. Toast one side of each bread slice in a skillet over medium heat. Flip, add the filling and cheese, and top with the other slice of bread. Cook until golden brown on both sides and the cheese is fully melted.
