Ingredients
 

For the Filling:

  • 1 cup Corn Kernels fresh or frozen, sweet, thawed
  • 1 cup Cherry Tomatoes halved or quartered
  • 1 cup Cheese mozzarella, or your favorite type, shredded cheddar
  • 1 tsp Salt or to taste
  • 1/2 tsp Pepper black, freshly ground, or to taste
  • 1 tbsp Butter for the sandwich press

For the Sandwich:

  • 4 slices Bread your favorite type; sourdough or whole wheat recommended

Instructions
 

Prepare the Filling

  • In a medium bowl, combine the sweet corn kernels, halved cherry tomatoes, shredded cheese, salt, and pepper. Gently toss to combine.

Assemble the Sandwiches

  • Spread a thin layer of butter on one side of each bread slice.
  • On two slices of bread, spread half of the corn and tomato mixture. Top with half of the cheese.
  • Place the remaining bread slices on top, buttered side up.

Grill the Sandwiches

  • Preheat your sandwich press or griddle to medium heat.
