Ingredients
Water Chestnuts
- 1 cup Water Chestnuts boiled and peeled, or chestnut paste
Filling
- 2 Tbsp Jaggery grated
- 2 Tbsp Coconut grated
- 2 Tbsp Dates chopped
- 1 pinch Cardamom Powder
Dough
- 1/2 cup Rice Flour
Garnish (Optional)
Instructions
- Boil the water chestnuts until tender. Peel and mash them into a smooth paste. Alternatively, use pre-made water chestnut paste.
- In a pan, melt the jaggery. Add the grated coconut, chopped dates, and cardamom powder. Stir continuously until the mixture thickens and comes together. This is the filling for the sweets. Set it aside.
- Combine the mashed water chestnut and rice flour. Knead into a smooth dough. The rice flour helps prevent cracking. Adding a little water at a time helps achieve the right dough consistency.
- Take a small portion of the dough and flatten it. Place a spoonful of the sweet coconut filling in the center. Gently bring the edges of the dough together to enclose the filling, forming a ball. The rustic, slightly irregular shape is part of this dessert's charm.
- Heat a clay pot or steamer. Line it with banana leaves, lightly greased with ghee, if available. This adds a subtle aroma and prevents sticking. Arrange the filled chestnut balls on the leaves.
- Cover the pot and steam for about 10 minutes, or until the dough is cooked through. Sprinkling a little water on the lid creates steam, which helps cook the sweets evenly.
- Serve the warm water chestnut sweets. Garnish with coconut milk and sweetened coconut, if desired. Alternatively, drizzle with honey or jaggery syrup.
Recipe Notes
Good To Know
- For an extra layer of flavor, lightly toast the grated coconut before mixing it with jaggery and dates; this enhances the nutty aroma and adds a subtle crunch to the sweet.
- If you prefer a smoother texture, blend the boiled water chestnuts into a fine puree before incorporating them into the rice flour dough—this can yield a more cohesive and delicate sweet.
- To make this dessert dairy-free, ensure your coconut milk is thick and creamy; you can reduce canned coconut milk over low heat for a richer consistency that mimics traditional condensed milk textures.
- Shape the sweets into small cylinders or discs, then gently roll them in finely chopped pistachios or desiccated coconut for a rustic yet appealing presentation that also adds a contrasting texture.
Expert Tips
- Experiment with different types of jaggery for unique flavor profiles. Darker jaggery will offer a deeper, more molasses-like taste, while lighter varieties have a milder sweetness.
- If your dough is too sticky, add a tablespoon of rice flour at a time until it reaches a workable consistency. If it’s too dry, add a teaspoon of water or milk until it comes together.
Storage Instructions
- Store these sweets in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
