Ingredients
Pointed Gourd
- 250 gm Pointed Gourd
Spice Paste
- 2 Tbsp Coconut fresh
- 2 Tbsp Mustard Seeds
- 2 Tbsp Poppy Seeds
- 2 Tbsp Sesame Seeds white
- 2 Tbsp Ginger Paste
- 2 Tbsp Chilies chopped, green
- Salt to taste
Other Ingredients
- 2 Tbsp Coconut Milk
- 2 tsp Mustard Oil
Instructions
- Wash the pointed gourds and cut them vertically. Scoop out the flesh from the inside and set it aside.
- In a food processor or blender, combine the fresh coconut, reserved pointed gourd flesh, mustard seeds, poppy seeds, white sesame seeds, ginger paste, chopped green chilies, and salt. Blend until a smooth paste forms.
- Heat 1 teaspoon of mustard oil in a pan. Add the chopped green chilies and sauté briefly. Then, add the prepared spice paste and sauté until fragrant. This helps to bloom the spices and deepen their flavor.
- While the spice paste is sautéing, parboil the hollowed-out pointed gourds until slightly softened but still firm enough to hold their shape.
- Carefully fill the parboiled pointed gourds with the sautéed spice paste.
- Heat the remaining 1 teaspoon of mustard oil in the same pan. Sauté the stuffed pointed gourds for a few minutes until lightly browned. This adds a nice texture and enhances the overall flavor. Add any remaining spice paste to the pan and cook for another minute.
- Serve the stuffed pointed gourds hot with steamed rice.
