Instructions

  • In a heavy-bottomed saucepan, combine the milk, bay leaves, and cardamom powder. Bring to a gentle simmer over medium heat, stirring occasionally to prevent sticking.
  • Reduce the heat to low and continue to simmer for about 10 minutes, stirring occasionally, until the milk slightly thickens and becomes fragrant. This gentle simmering infuses the milk with the spices.
  • In a small bowl, whisk together the rice flour with a little bit of the warm milk to form a smooth paste. This prevents lumps from forming when added to the kheer.
  • Slowly drizzle the rice flour paste into the simmering milk, whisking constantly to ensure it incorporates smoothly and the kheer thickens further.
  • Add the saffron strands to the kheer. Stir gently and continue to simmer for another 5 minutes, allowing the saffron to infuse its color and flavor into the milk.
  • Remove the saucepan from the heat and stir in the sugar. Allow the kheer to cool slightly. The residual heat will help dissolve the sugar.
  • Gently squeeze each rasgulla to remove excess syrup, then add them to the warm kheer. This allows the rasgullas to absorb the flavorful milk.

  • Garnish with cashews and raisins. Allow the kheer to sit for at least 30 minutes before serving to allow the rasgullas to soak up the kheer and the flavors to meld beautifully. Serve chilled or at room temperature.

Recipe Notes

Good To Know

  • Don’t put the rasgulla in the boiling milk, as the milk will curdle immediately.
  • For extra crunch, garnish the finished dessert with a scattering of toasted chopped pistachios or almonds just before serving; their nutty flavor pairs beautifully with the soft rasgulla and creamy base.
  • If you prefer a richer flavor, infuse the milk with a few strands of saffron and allow it to steep for at least 10 minutes before proceeding with the recipe—this will deepen both color and aroma.
  • Drain the rasgullas gently and squeeze out some syrup before adding them to the milk mixture; this prevents the dessert from becoming overly sweet and helps the rasgullas absorb the creamy base.
  • For an elegant presentation, serve the dessert chilled in individual glass bowls and sprinkle a tiny pinch of freshly ground cardamom and a few saffron strands on top just before serving.

Expert Tips

  • For a vegan version, substitute the rasgulla with vegan cheese balls and use coconut milk instead of dairy milk. Adjust sweetness as needed.
  • Experiment with different flavors by adding a touch of rose water or cardamom powder to the milk mixture.
  • If you don't have fresh saffron, a pinch of turmeric can provide a similar golden hue to the milk.

Storage Instructions

  • Store leftover dessert in an airtight container in the refrigerator for up to 2 days. The texture of the rasgulla may change slightly upon refrigeration.
