  • 1/2 cup Sugar adjust to your sweetness preference, granulated

  • 1/2 cup Coconut freshly shredded is best, shredded
  • 1/4 cup Nuts cashews, finely chopped; such as almonds, mixed, pistachios
  • 1 tsp Cardamom ground, use freshly ground for the best flavor
  • Pinch Saffron threads; optional, for added color and flavor

Instructions
 

Preparing the Grains

  • Rinse the rice and barley thoroughly under cold water until the water runs clear.

Simmering the Milk and Grains

  • In a heavy-bottomed saucepan, bring the milk to a gentle boil over medium heat. Stir frequently to prevent sticking. Add the rinsed rice and barley. Reduce heat to low, cover, and simmer for 20-25 minutes, stirring occasionally, until the grains are tender and the milk has thickened slightly.

Adding Sweetness and Flavor

  • Stir in the sugar, shredded coconut, and chopped nuts. Continue to simmer for another 5-7 minutes, allowing the flavors to meld. Remove from heat and stir in the ground cardamom. If using, gently stir in the saffron threads during the last minute of cooking.

Serving and Cooling

  • Allow the kheer to cool slightly before serving. Garnish with extra nuts and coconut, if desired. Serve warm or chilled.
