Prepare the Dhansak Masala Paste

  • Grind together cilantro, mint, garlic, and ginger into a smooth paste. Set aside.

Sauté the Vegetables

  • Heat 1 tbsp oil in a pan. Add cumin seeds and sauté until fragrant. Add chopped onion and sauté until golden brown.

Make the Filling

  • Add mashed potato and cooked sweet corn to the pan. Mix well. Add the dhansak masala paste, red chili powder, dhansak masala, salt, and lemon juice. Sauté until well combined.

Add Paneer and Cool

  • Stir in the grated paneer. Cook for 1 minute. Remove from heat and let the filling cool completely.

Prepare the Dough

  • In a large bowl, combine whole wheat flour, semolina, carom seeds, and salt. Add hot oil and rub into the flour using your fingertips until it resembles breadcrumbs.

Knead the Dough

  • Gradually add water, mixing until a smooth, pliable dough forms. Knead for 5-7 minutes until smooth. Cover the dough with a damp cloth and let it rest for 15 minutes.

Preheat Oven

  • Preheat oven to 375°F (190°C).

Assemble the Samosas

  • Roll out small portions of the dough into thin circles. Cut each circle in half. Shape each half into a cone, wetting the edges to seal.

Fill and Bake

  • Fill each cone with the cooled dhansak filling. Seal the edges tightly, pressing to ensure no filling spills out. Place the samosas on a baking sheet lined with parchment paper.

Brush and Bake

  • Brush the samosas with oil. Bake for 20 minutes. Flip, brush with more oil and bake for another 20 minutes, or until golden brown and crispy. For extra crispiness, broil for the last 2-3 minutes, watching carefully to prevent burning.

Serve

  • Remove from the oven and serve hot with your favorite chutney or sauce. Samosas are best served fresh but can be stored in an airtight container for up to 2 days.
