Prepare the Samosa Filling

  • Heat oil in a pan. Add cumin seeds and asafoetida. Sauté for a few seconds.
  • Add the boiled and mashed potatoes, peas, green chilies, and ginger. Mix well.
  • Add salt and all the spices (red chili powder, turmeric powder, chaat masala, garam masala, amchur powder, and fenugreek leaves). Mix thoroughly.
  • Stir in the chopped cashews and raisins. Add the fresh coriander and mix well. The filling is ready.

Make the Dough

  • In a large bowl, combine flour, salt, and ghee. Mix well.
  • Gradually add water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth.
  • Roll the dough into a ball, lightly grease with oil, and set aside for 15 minutes to rest.

Assemble the Samosas

  • Roll out small portions of the dough into thin circles using a rolling pin or cookie cutter.
  • Cut out two identical circles for each samosa. Place a spoonful of the filling in the center of one circle.
  • Top with the second circle, pressing the edges firmly to seal.
  • Using a small lid or similar item, mark the center of the samosa. Cut four slits from the center mark to the edge to create a flower shape.
  • Cut again between the first cuts to create eight equal petals.
  • Shape the petals, slightly spreading them outwards to form a flower.
  • Prick the center with a fork to prevent it from puffing up too much during baking.
  • Brush lightly with oil and sprinkle with sesame seeds.

Bake the Samosas

  • Preheat oven to 350°F (180°C). Place the samosas on a greased baking sheet.
  • Bake for 20-25 minutes, or until golden brown and crispy.
  • Remove from the oven and let cool slightly before serving. Serve with your favorite chutney or sauce.
