Ingredients
For the Samosa Filling
- 2 Potato boiled and mashed
- 1/2 cup Peas boiled
- 1 Chili finely chopped, green
- 1 tsp Ginger finely chopped
- 1 tbsp Coriander chopped (cilantro), fresh
- 1 tbsp Oil for sautéing
- 1 tsp Cumin Seeds jeera
- 1/4 tsp Asafoetida hing
- 1 tsp Chili Powder red
- 1/2 tsp Turmeric Powder haldi
- 1 tsp Chaat Masala
- 1 tsp Garam Masala
- 1 tsp Dry Mango Powder dry mango powder
- 1 tsp Fenugreek Leaves kasuri methi
- 1/4 cup Cashews chopped
- 1/4 cup Raisins kishmish
For the Samosa Dough
- 1 1/2 cup All-Purpose Flour
- 1 tsp Sesame Seeds black, for garnish
- 2 tbsp Ghee clarified butter (desi ghee)
- 1/2 tsp Salt or to taste
- 2 tbsp Oil for greasing
- 1/2 cup Water or as needed to make dough
Instructions
Prepare the Samosa Filling
- Heat oil in a pan. Add cumin seeds and asafoetida. Sauté for a few seconds.
- Add the boiled and mashed potatoes, peas, green chilies, and ginger. Mix well.
- Add salt and all the spices (red chili powder, turmeric powder, chaat masala, garam masala, amchur powder, and fenugreek leaves). Mix thoroughly.
- Stir in the chopped cashews and raisins. Add the fresh coriander and mix well. The filling is ready.
Make the Dough
- In a large bowl, combine flour, salt, and ghee. Mix well.
- Gradually add water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth.
- Roll the dough into a ball, lightly grease with oil, and set aside for 15 minutes to rest.
Assemble the Samosas
- Roll out small portions of the dough into thin circles using a rolling pin or cookie cutter.
- Cut out two identical circles for each samosa. Place a spoonful of the filling in the center of one circle.
- Top with the second circle, pressing the edges firmly to seal.
- Using a small lid or similar item, mark the center of the samosa. Cut four slits from the center mark to the edge to create a flower shape.
- Cut again between the first cuts to create eight equal petals.
- Shape the petals, slightly spreading them outwards to form a flower.
- Prick the center with a fork to prevent it from puffing up too much during baking.
- Brush lightly with oil and sprinkle with sesame seeds.
Bake the Samosas
- Preheat oven to 350°F (180°C). Place the samosas on a greased baking sheet.
- Bake for 20-25 minutes, or until golden brown and crispy.
- Remove from the oven and let cool slightly before serving. Serve with your favorite chutney or sauce.
