Prepare the Green Chili Paste

  • Blend green chilies, garlic, and ginger into a coarse paste.

Make the Samosa Dough

  • In a bowl, combine all-purpose flour, salt, and desi ghee. Mix well using your fingertips until it resembles breadcrumbs.
  • Add crushed carom seeds and gradually add water, kneading until a slightly stiff dough forms. Cover and set aside.

Prepare the Samosa Filling

  • Heat oil in a pan. Add cumin seeds and ground coriander seeds; let them splutter.
  • Add finely chopped onions and salt. Cook until translucent.
  • Add the green chili paste and cook until the raw smell disappears.
  • Stir in turmeric, coriander, cumin, red chili powder, and asafoetida. Cook for a few seconds.
  • Add the boiled potatoes, peas, cashews, raisins, chopped coriander, and lemon juice. Mix well to combine.

Make the Slurry

  • In a small bowl, whisk together all-purpose flour and water to form a thick slurry.

Assemble and Bake the Samosas

  • Preheat the oven to 350°F (180°C).
  • Roll out small portions of the dough into thin circles. Cut each circle into semi-circles.
  • Form each semi-circle into a cone shape, sealing the edges with the slurry.
  • Fill each cone with about 1 1/2 tablespoons of the prepared filling.
  • Seal the top of the cone with more slurry, ensuring it's tightly closed.
  • Arrange the samosas on a baking sheet. Brush them with ghee or oil.
  • Bake for 18 minutes. Brush with more oil, increase the oven temperature to 400°F (200°C), and bake for another 2-3 minutes, or until golden brown and crispy.
  • Avoid overbaking to prevent a hard exterior.
  • Serve hot with your favorite chutney or ketchup.
