Instructions
Make the Dough
- Combine flour, baking soda, ajwain, 1 tbsp oil, and salt in a bowl. Gradually add water, mixing until a smooth, pliable dough forms. Cover and let it rest for at least 30 minutes.
Prepare the Filling
- Heat 1 tbsp oil in a pan. Add chopped ginger and green chilies; sauté for a minute. Add cumin seeds, red chili powder, and garam masala; sauté briefly. Stir in boiled green peas and mashed potatoes. Season with salt and coriander leaves. Mix well.
Assemble and Fry the Samosas
- Divide the dough into small balls. Roll each ball into a thin circle. Use a cookie cutter or knife to cut out rings. Fill the center of each ring with the potato mixture. Carefully bring the edges together to seal.
Deep Fry the Ring Samosas
- Heat vegetable oil in a deep pan or wok over medium-high heat. Gently drop the ring samosas into the hot oil, ensuring not to overcrowd the pan. Fry until golden brown and crispy, turning occasionally. Remove and drain on paper towels.
Serve
- Serve your crispy ring samosas hot with your favorite chutney or sauce.
Recipe Notes
Expert Tips for Perfect Ring Samosas
- For extra crispy samosas, allow the dough to rest for longer – up to an hour. This helps develop gluten and creates a crispier texture.
- Don't overcrowd the pan when frying. This will lower the oil temperature and result in soggy samosas. Fry in batches for best results.
- Adjust the spice levels in the filling according to your preference. Add more or less chili powder based on your heat tolerance.
- Experiment with different fillings! Try adding paneer (Indian cheese) or other vegetables for variations.
