- 2 stalks Lemongrass bruised gently
- 2 leaves Kaffir Lime Leaves
Flavor Base
- 2 tbsp Tamarind Paste thick tamarind paste
- 3 tbsp Tom Yum Paste readily available in asian grocery stores.
- 1.5 tsp Salt adjust to taste
Vegetables
- 2 cup Vegetables baby corn, cabbage, chopped. choose your favorites!, mixed, mushrooms, red chilies, spring onions, suggested: zucchini
Garnish & Acidity
- 1.5 tsp Lime Zest grated green part of lime peel only
- 1.5 stalks Coriander leaves removed, stems only
- 10 leaves Basil fresh thai basil preferred, optional
- 2 tbsp Lime Juice freshly squeezed
- 1 can (13.5 oz) Coconut Milk adds creaminess. use full-fat for best results., optional
Instructions
Prepare the Broth
- Bring vegetable stock to a boil in a pot. Add lemongrass and kaffir lime leaves. Simmer for 5 minutes to infuse the flavors.
Add Flavor Base
- Reduce heat to medium-low. Stir in tamarind pulp, tom yum paste, and salt. Simmer for another 5-8 minutes, until fragrant.
Cook Vegetables
- Add the mixed vegetables and cook for 3-5 minutes, or until tender-crisp. If using coconut milk, stir it in during the last minute of cooking.
