Ingredients
For the Mutton Marinade
- 400 gm Mutton bone-in or boneless, cut into 1-inch cubes
- 1 tbsp Peppercorns
- 3 Chili chopped, green
- 1 inch Ginger chopped
- 6 Garlic chopped
- 1 tbsp Lemon Juice
- 1 tsp Salt to taste
For the Spice Blend (Dry Roast and Grind)
- 1 small stick Cinnamon
- 2 Cardamom green or black
- 3 Cloves
- 1 Star Anise small piece
- 3 Chili dry, red, whole
- 0.5 tsp Cumin Seeds
- 1 tsp Fennel Seeds
Other Ingredients
- 2 medium Onion finely chopped
- 1 tbsp Turmeric Powder
- 1 tbsp Chili Powder
- 1 tbsp Garam Masala
- 1 large Tomato finely chopped
- 1 cup Water or as needed
- 1 sprig Curry Leaves
- 3 tbsp Clarified Butter desi ghee preferred
- 0.25 cup Coriander chopped, for garnish
Instructions
Prepare the Mutton Marinade
- Grind together peppercorns, green chilies, ginger, and garlic with a little water to form a smooth paste. Add this paste, lemon juice, and salt to the mutton pieces. Mix well and marinate for at least 30 minutes, or preferably 1-2 hours in the refrigerator.
Pressure Cook the Mutton
- Place the marinated mutton in a pressure cooker. Add 1 cup of water. Pressure cook for 10-12 minutes, or until the mutton is almost tender. Allow the pressure to release naturally. If any liquid remains, simmer uncovered until it evaporates completely.
Prepare the Spice Blend
- In a dry pan, gently roast the cinnamon stick, cardamom pods, cloves, star anise, and dry red chilies until fragrant. Allow to cool slightly, then grind to a fine powder along with the cumin seeds and fennel seeds.
Sauté Aromatics and Spices
- Heat ghee in a heavy-bottomed pan or kadai over medium heat. Add the whole spices (if using any remaining), curry leaves, and sauté for about a minute until fragrant.
Cook Onions and Tomatoes
- Add the chopped onions and cook until softened, about 5-7 minutes. Add the chopped tomatoes and cook until they turn mushy, about another 5 minutes.
Add Masala and Mutton
- Stir in the turmeric powder, chili powder, garam masala, and salt to taste. Sauté for 1 minute. Add the cooked mutton to the pan. Stir gently to coat the mutton evenly with the masala.
Roast the Mutton
- Reduce heat to low. Roast the mutton for about 5-7 minutes, stirring frequently, until the masala is well incorporated and the mutton is heated through.
Final Roast and Garnish
- Increase the heat to medium-high and continue roasting for another 10 minutes, stirring frequently, until the mutton is slightly browned and the ghee separates slightly. Stir in the chopped coriander leaves. Remove from heat.
Serve
- Garnish with extra coriander leaves and serve hot with rice, dosa, appam, or roti.
