  • 1 cup Rice
  • 1/2 cup Gram black, split, urad dal, whole
  • 1/4 tsp Fenugreek seeds, methi dana
  • Water as needed
  • Salt as needed

  • Wash the rice thoroughly 3-4 times. Soak the rice in water for at least 4 hours. This allows the rice to soften and hydrate, resulting in a smoother batter.
  • Drain the soaked rice. Grind the rice into a thick, smooth paste, adding a little water as needed.
  • In a separate vessel, wash and soak the split black gram and fenugreek seeds for at least 4 hours. Drain and grind into a smooth batter, similar to the rice.
  • Combine the rice and lentil batters in a large vessel. Mix thoroughly until well combined.
  • Add salt to the combined batter. Mix well. Cover the vessel and let it ferment in a warm place overnight or for at least 5-6 hours. The fermentation time may vary depending on the temperature. Fermentation gives the dosa its characteristic tangy flavor and light texture.
  • Lightly grease a non-stick tawa or griddle with a few drops of desi ghee.
  • Heat the tawa over medium heat. Once hot, pour a ladleful of batter onto the center of the hot tawa.

  • Using the back of the ladle, quickly spread the batter outwards in a circular motion to form a thin crepe. The thinner the dosa, the crispier it will be.

  • Drizzle ghee around the edges and in the center of the dosa. This adds flavor and helps achieve a beautiful golden-brown color.

  • Cook until the edges of the dosa lift easily and the underside turns golden brown and crisp. This usually takes 2-3 minutes.

  • Flip the dosa and cook the other side briefly for about 30 seconds to 1 minute. This ensures both sides are cooked evenly.

  • Remove the crispy ghee roast dosa from the tawa. Repeat the process with the remaining batter.
