Ingredients
Vegetables
- 250 gm Lotus Root also known as kamal kakdi; thoroughly scrubbed and peeled
- 1 medium Potato peeled and cut into 1-inch cubes
- 1 large Tomato chopped
- 2 Onion medium-sized, chopped
- 1 bunch Coriander fresh, chopped; use for garnish
Spices & Aromatics
- 1 tsp Ginger Paste
- 1/2 tsp Turmeric Powder haldi
- 2 tsp Coriander Powder dhania
- 1 tsp Chili Powder adjust to your spice preference, red
- 1.5 tsp Salt or to taste
- 1 pinch Garam Masala
Instructions
Preparation
- Scrub and wash the lotus root thoroughly. Peel and cut it into 1/2-inch thick diagonal slices. Peel and cube the potatoes.
Sautéing Aromatics
- Heat the oil in a pressure cooker or large pot. Add the chopped onions and sauté until lightly browned. Add the ginger paste and sauté for another 30 seconds until fragrant.
Spice Blend
- Stir in the turmeric powder, coriander powder, red chili powder, and salt. Sauté for a minute, adding a little water if needed to prevent burning. Continue until the oil starts to separate from the spices.
Cooking the Vegetables
- Add the lotus root and potatoes to the spice mixture. Mix well to coat evenly. Add 1/2 cup of water, close the lid of your pressure cooker (or cover the pot), and cook until the vegetables are tender. If using a pressure cooker, let the pressure release naturally.
Simmering and Finishing
- Once the pressure is released, add the chopped tomatoes. Cook over low heat until both the lotus root and tomatoes are tender and the sauce has thickened slightly. Stir in the garam masala. Garnish with fresh coriander leaves.
Serving
- Serve the hot Sindhi Kamal Kakdi Sabzi with rotis, naan, or steamed rice.
