Ingredients
Lotus Stem
- 2 Lotus Stems medium size
For the Coating
- 2 Tbsp Corn Flour
- 1 ½ tsp Salt or to taste
For the Honey Chili Sauce
- 1 tsp Oil
- 1 Tbsp Garlic minced
- 1 tsp Chili Flakes red
- 1 Tbsp Honey
- 1 Tbsp Tomato Sauce
- 1 tsp Soy Sauce
- 1 Tbsp Sesame Seeds toasted
- 1 tsp Oregano dried
- 1 ½ tsp Salt or to taste
For Frying
- Oil for frying
Instructions
- Clean and wash the lotus stems thoroughly. Slice them diagonally into thin, long pieces. Submerge the sliced lotus stems in a bowl of water to remove any remaining dirt. This also helps prevent browning.
- Pat the lotus stem slices dry with a clean kitchen towel or paper towels. Removing excess moisture is crucial for achieving a crispy texture when frying.
- In a bowl, combine the dried lotus stem slices, corn flour, and salt. Toss gently until the lotus stems are evenly coated with the corn flour mixture.
- Heat oil in a pan over medium-high heat. Once the oil is hot, add the corn flour-coated lotus stem slices. Initially, fry them on high heat for a minute to seal in the coating. Then, reduce the heat to medium and continue frying until they turn golden brown and crispy.
- Remove the crispy lotus stem chips from the pan and place them on a plate lined with paper towels to absorb any excess oil.
- In a separate pan, heat a teaspoon of oil over medium heat. Add the minced garlic and sauté until fragrant. Add the red chili flakes and sauté for a few seconds more.
- Add the dried oregano, salt, honey, tomato sauce, and soy sauce to the pan. Mix well to combine all the ingredients for the honey chili sauce.
- Add the fried lotus stem chips to the honey chili sauce. Toss gently to coat the chips evenly with the sauce. Finally, sprinkle with toasted sesame seeds and serve immediately.
Recipe Notes
Good To Know
- Try to keep the lotus stem chips as thin as possible for maximum crispiness.
- Adjust the quantity of honey, chili, and sauces to your liking.
- For extra crunch, double-fry the lotus stem slices: fry them once until lightly golden, let them cool, then fry again for an ultra-crispy texture before tossing in the sauce.
- If you prefer a smokier flavor, add a dash of smoked paprika or gently char the lotus stem slices under a broiler for 1-2 minutes after frying.
- To make this dish vegan, use maple syrup or agave nectar instead of honey; both options will maintain the glossy, sticky glaze and sweet note.
- Serve the dish on a bed of fresh lettuce leaves or with a sprinkle of toasted sesame seeds and chopped scallions for added color and crunch.
Expert Tips
- Soaking the sliced lotus root in ice water for about 30 minutes before frying helps to remove excess starch and results in crispier chips.
- Don't overcrowd the pan when frying. Fry the lotus root in batches to ensure even cooking and browning.
- For a spicier kick, add a pinch of cayenne pepper or a few finely chopped red chili flakes to the sauce.
Storage Instructions
- These crispy lotus root chips are best enjoyed immediately after frying. If you have leftovers, store them in an airtight container at room temperature for up to 1 day. They may lose some of their crispness.
