Ingredients
 

Lotus Stem Preparation

  • 4-5 Lotus Stem boiled and sliced into 1/2-inch thick rounds, kamal kakdi

Dry Spice Blend

Batter & Coating

  • 1 cup Gram Flour besan
  • 0.5 tsp Salt adjust to taste
  • 1 tsp Oil for the batter and air fryer
  • 1/2 cup Water or as needed to make a smooth batter

Instructions
 

Prepare the Lotus Stem

  • Slit the boiled lotus stem into halves or quarters lengthwise. In a bowl, combine the red chili powder, garam masala, amchur, cumin seeds, and ajwain. Toss the lotus stem pieces in this spice mixture, ensuring they are evenly coated.

Make the Batter

  • In a separate bowl, whisk together the gram flour, salt, and 1 tsp of oil. Gradually add water, mixing continuously until you achieve a smooth, slightly thick batter. The consistency should be similar to pancake batter.

Coat and Air Fry

  • Dip each spiced lotus stem piece into the gram flour batter, ensuring it's fully coated. Arrange the coated pieces on a sheet of lightly oiled aluminum foil.

Air Frying

  • Preheat your air fryer to 180°C (350°F). Place the foil-lined tray with the lotus stem fritters into the air fryer and cook for 15-20 minutes, shaking the basket halfway through, until golden brown and crispy. Adjust cooking time depending on your air fryer and desired crispiness.
